Noah and I have always been "into camping". Noah is an Eagle Scout with a ton of camping experience and I have been an outdoorsy, sleep under the stars person for as long as I can remember. Living in South Texas, we have long taken advantage of the great Texas State Parks system. A few years ago, we acquired a Bunkhouse motorcycle tent trailer used from my older sister and we suddenly went from camping only in spring and fall to being 4 season campers. With the addition of Serenity (as the trailer was named) we made it our goal to camp once a month (when possible). We are now almost 2 years in with that as our goal and so far it's been amazing! We've made improvements to our camping setup for both weekend and longer trips and have been branching out further and further from our South Texas home.
About six months ago, we realized that on our last morning of camping, we often opt out of making breakfast - preferring to pack up and get on the road before we lose our morning momentum. When we do this, we usually use the internet to try to find a local, hole in the wall breakfast taco (or burrito) stand. And thus, our trips became known as "Tents and Tacos". And after joking with some friends about blogging about our experiences, we've finally bit the bullet!
Here's our regular long weekend set up (and the cast of characters). First up, Ella the Element:
