One of the things I love most about camping is getting a chance to share a camp cook meal around a fire with great friends and family. Noah and I both enjoy camp cooking and often tweak and create recipes.
We will sometimes share recipes here on our blog. Because of the way advertising on blogs work, you often have to scroll past a ton of extraneous photos and paragraphs waxing poetic about the recipe. We aren't going to do that here. If you want a recipe, you'll find a recipe. No crazy scrolling. A couple of pictures of the food and the process if it's tricky, and a text recipe. Here's today's tasty camping recipe:
Chicken, Potato and Kale soup
Ingredients:
1/2 lb chicken, cooked (we make this soup from leftovers)
2 c chicken broth (bone broth, caldo de pollo or made from broth cubes)
1 Tbsp butter or olive oil
1/2 onion, diced (I use sweet yellow)
2 Tbsp minced garlic
a small bunch of fresh kale, spinach or collard greens
2 medium or large potatoes, cubed
2 carrots, chopped
2 ribs of celery, chopped
1 c milk or half and half
Directions:
In a large saucepan, heat oil or butter. Add onion and garlic. Saute until onion is transparent. Add broth, carrots, celery and potatoes. Simmer until potatoes and carrots are tender. Add chopped or shredded chicken. Taste broth and add salt to taste. We also like to add a little cajun seasoning. Toss in fresh kale and milk. Stir until combined and the kale is wilted. Serve with some tasty bread.
